my intention for October
Well, we blinked, and it’s October. I can’t help but think that every year goes by faster than the last, and I keep wanting to hold on a little tighter to every day and week that passes me by. Sometimes I feel guilty for not taking time to notice all of the little things that make up a day.
So here’s your reminder to take a second to notice. Maybe it’s being present with your coffee in the morning instead of rushing right into your computer work, smiling at a stranger as you pass them on the street, or taking yourself out to a meal without your phone. Stretching those moments of peace is my biggest intention for this month!

I fought the temptation to include, “all of the above.” I always love getting your feedback on what I can focus on to make your life easier, and more delicious, obviously. I have gotten so many compliments on this dress. I am in my dress era now, which is funny because if you know me, I mostly wear button downs, men’s jeans, and generally drown in my clothing. But I thought I’d switch it up for fall, you know? It’s flattering, and perfectly paired with some kitten heels. It’s also puzzle, which I love, and can’t stop talking about.
I have used this transformative kitchen tool / bestie for the past year, but they are now in New York!!! I love this company SO much — it’s a food recycler that takes your food scraps and transforms them into dry, odorless grounds, a perfect compost alternative that isn’t disgusting and hard to live with in a small space. It has seriously changed my life, especially as someone who was already conscious about her food waste. If you live in New York, and have not been to Café Integral, I highly suggest you make a trip. I get the iced Horchata Latte - which is made with housemade almond milk sweetened with dates. Say less, I know.
I recently splurged on this compact that I wanted to hate, but unfortunately didn’t. It’s a perfect complexion touch-up, especially if you’re like me and hate wearing a lot of makeup on your face. It’s natural and doesn’t feel heavy on your skin. A+.
The Recipe: Healthy Honey-Blueberry Muffins
The blueberry muffins are soft, fluffy, cakey, and honestly, the perfect little coffee treat for fall. They’re sweetened just with honey, and are delicious served warm with some vegan butter, an extra drizzle of honey, or just solo. I hope you enjoy this recipe!
Honey Blueberry Muffins
Yield: 6 muffins
Ingredients
1 Egg
1/4 Cup creamy almond butter
2 TBSP coconut oil, melted and cooled
1/2 Cup honey
1 Tsp vanilla extract
2 TBSP fresh lemon juice
2 cups almond flour
1/2 Tsp baking powder
2 TBSP plant milk
1 cup blueberries, fresh or frozen
pinch salt
muffin liners
Method
1. Preheat oven to 350 F.
2. Line a muffin tin (6 wells) with muffin liners.
3. In a medium bowl, beat the egg.
4. Add almond butter, coconut oil, honey, vanilla extract and lemon juice; mix until smooth.
5. In a separate bowl, whisk together almond flour, baking powder and a pinch of salt.
6. Add the dry ingredients to the wet and mix until well incorporated.
7. Add almond milk to thin batter as needed and stir to combine.
8. Gently fold in the blueberries. You do not want to break these juicy little jewels!
9. Divide and pour the batter evenly into the prepared muffin wells.
10. Bake muffins until the edges are golden brown and a toothpick inserted into the center of a muffin comes out clean, about 30 to 35 minutes.
