I’m genuinely SO over seeing sad leaves on everyone’s table. What is a side salad even? What is the purpose of them? To make us feel better about ourselves by eating one shred of green? Drenched in a lackluster Italian dressing?
Even though this is a time of year where we all crave more rich, decadent, and comforting items on our tables, I simply do not live in a world in which I think a salad should be a boring palate cleanser or an afterthought. Sure, it can be a break from the more substantive items on the table, but it should also be able to complement and stand up to the main dishes — with complexity and flavor to be independently delicious. With that being said, enter: Massaged Kale Salad! With Dates, Roasted Sweet Potatoes, Toasted Pumpkin Seeds, tossed in a Mustard-Tahini dressing.
This is one of my favorite ways to an eat a kale salad — massaged, with roasted sweet potatoes, and dates (duh). It’s hearty and perfect for the season, working to complement anything on your Thanksgiving or holiday table. It’s also great to eat solo should you choose! It’s tangy, sweet, savory, crunchy, chewy. No sad salad here…
