snickerdoodle cake bars
for when you want a snickerdoodle cookie...but also want cake
Hello everyone!! I hope you’ve been having a nice start to December and staying warm…

I’ve been working on a healthy holiday baking series, reinventing holiday classic desserts and Dada-fy-ing (?) them. This means that I make them in my style of baking that I’ve been perfecting over the past decade, using minimal, unprocessed ingredients to create something that is still very decadent (but you’d never even guess was sort of healthy….)
As a result of this style of baking, a lot of my recipes happen to be gluten and dairy-free (but you know that already if you’ve been here for awhile). It’s not to say that you shouldn’t have the regular versions of these amazing desserts, if you like and can!! But what I’ve found is that so many people with intolerances or preferences simply can’t have those versions - so by using these ingredients, the recipes become even more inclusive - whether or not you follow certain dietary needs or not.

As part of this series you can check out my Peanut Butter Snowballs and Pecan Pie Bars, both on my Instagram page. But for my Substack community, you’re getting first and early access to my latest - Snickerdoodle Cake Bars!
snickerdoodle cake bars
These Snickerdoodle Cake bars are the best thing to make on an occasion when you want a snickerdoodle cookie…but also want cake. Why should you have to choose?! These happen to be gluten and dairy-free, but I promise you won’t miss either. Imagine a perfect union between a snickerdoodle cookie and a fluffy coffee cake…and that’s the experience that you will get eating this dessert.
I find these to be perfect with an afternoon cup of coffee, or warmed up with a scoop of vanilla ice cream for dessert.

You’re going to love this recipe and I hope you enjoy!
