I hope you had a great weekend. I spent mine catching up with some friends, walking a lot, listening to Noah Kahan’s new album, watching one of my favorite Bollywood movies (Om Shanti Om…the best). I went to some great restaurants this week (Adda and Sawa - yummmmm) which was exciting to balance out how much I’ve been hosting at home!






I am coming to you with what. know will be my favorite no-bake dessert this spring / summer - No-Bake Smashed Date Cookie Dough Bars. Guys, I simply cannot with these… they are BEYOND good, probably one of my favorite no-bake desserts I’ve ever made. They’re vegan and gluten-free, take no time to put together, and are a great use of dates if you want to switch up from the normal stuffed date that we alllll must have in the rotation at this point.


You can slice these into bars or squares, either will work! I like bars for a more dramatic effect, but squares are nice for when you’re hosting or making a batch for yourself, and just want to have easier squares to grab. These bars are gluten-free, vegan, and made without any refined sugar, so they make for a healthier dessert when you’re craving something sweet!
As always, my favorite dates are from Rancho Meladuco Farms - they’re the best dates EVER and I have never had another one that matches up. I’ll share my favorite brands of the other ingredients in the recipe list below as well.
