Hello everyone. Welcome to Wednesday. On Monday, I cooked dinner for myself for the first time in FOREVER - I have to and hate to admit that since most of my days are spent cooking and baking (…no-baking, whatever) and I’m often at events in the night, I rarely have the energy to spend on making a meal for myself. Which is kind of sad… but I’m trying to work on recommitting to caring for myself in this way - it sounds obvious but it has already made me feel so much better, in just a few days….and I went to the gym so like, watch out summer

Contributing to my good spirits is that I also didn’t speak to a SOUL or do a single thing this past weekend, watched the entire first season of “Off-Campus” (what is it about a teen show that comforts me lol), got my nails done and…. I HAD THE BEST TIME. Why is my favorite form of self-care sometimes just…completely checking out and not being a functioning human??


Anyyyywayyyy I am coming to you today with a new favorite no-bake dessert: No-Bake Smashed Date Brownie Bars!


If you’re a lover of chocolate like me, these are definitely for you. You might remember the Smashed Date Cookie Dough bars I shared a couple weeks ago, and these are its sibling. SOOO GOOD, happen to be vegan and gluten-free, and a fun use for dates. They add texture / chew / and natural sweetness to this dessert. These bars are gluten-free, vegan, and made without any refined sugar, so they make for a healthier dessert when you’re craving something sweet!

I’ll note again that, as always, my favorite dates are from Rancho Meladuco Farms - they’re the best dates EVER and I have never had another one that matches up.
