Mini Vegan & Gluten-Free Chocolate Pecan Pies
the only thing better than a pecan pie, is a CHOCOLATE one that's MINI
It does, in my humble opinion, seem sliiiiightly criminal to not have pecan pie somewhere in your orbit for Thanksgiving dinner (unless of course, you’re allergic, in which case, obviously….please don’t eat it). Rich and nutty, pecan pie is a holiday table staple that I wanted to challenge myself to create in a new way, with whole-food ingredients but without dairy or processed sugar so it can be as inclusive to everyone on your table as possible.

I know this sounds kind of crazy because it’s normally the last thing you’d expect, (or perhaps even want) from a pecan pie, especially on Thanksgiving is that it’s like…. vegan and gluten-free, but just TRUST on this one. It is just as comforting and delicious as the original application.
These mini pecan pies have a rich, perfectly sweetened chocolate pecan filling, and a chewy, almost cookie-like gluten-free crust for the filling to live in. I like to bake them into minis because they’re unfussy to make and easy to pass around the table, but you can of course make them in a regular sized muffin pan as well.
