Happy Thursday everyone. Today is an exciting day because I’m giving you THE BEST SALAD of my month, this Indian Crispy Rice Salad.

My dad used to turn khichdi rice into crispy rice by frying it on a pan, which inspired me to make the profile of the crispy rice in this salad. My crispy rice salad is made with long-grain Indian basmati rice, spiced with healing and delicious spices. It’s spicy and crunchy and SO perfect, especially when cooled off by a coconut yogurt-based chutney dressing, creamy avocado cubes, crunchy cucumbers, chickpeas, sweet tomatoes, and sharp red onions. Not to be dramatic, but the biggest issue I have with the state of salads today is the lack of diversity in texture and this salad truly has it all.


The dressing uses a base of coconut yogurt, so it’s akin to an Indian raita - but made completely vegan. My favorite coconut yogurt for this is Culina - I find that it’s thick and creamy and gives a really beautiful texture and tang without that aggressive coconut taste. This is the kind of salad that feels as elevated to serve as it is simple to whip up for a dinner or lunch for yourself. You truly just toss the rice in the oven, forget about it, make the dressing in a blender, and toss everrrryyything together in a bowl.
