INGREDIENTS
COOKIE DOUGH STUFFED DATES
1/4 cup creamy peanut butter
1/4 cup maple syrup
1/2 tsp vanilla extract
1/2 cup almond flour
1 tbsp coconut flour
Mini vegan chocolate chips (if you can’t find mini, your favorite chips will do)!
Flaky sea salt
10-12 medjool dates
3/4 cup chocolate chips
1 tbsp coconut oil
METHOD
Prepare a cookie sheet by lining with parchment paper.
In a medium bowl, combine creamy peanut butter, maple syrup, and vanilla extract together. Mix to incorporate.
To the peanut butter mixture, add almond flour, coconut flour, and a pinch of salt. Mix until a thick and sticky cookie dough is achieved.
Fold in mini or regular chocolate chips. Set aside.
Pit your dates.
Melt chocolate by combining the chips with the coconut oil, and microwaving in 15 second increments, stirring between intervals, until smooth and glossy.
Stuff each date with about 2 tsp of cookie dough, pressing the cookie dough into the date until it is evenly stuffed.
Take each date for a swim in melted chocolate, ensuring it is fully coated! Top with flaky salt. Place on the parchment lined sheet.
Once all dates have been stuffed, transfer the pan to the fridge to set for about 1 hour.
