Happy Friday, and sending love to everyone after this crazy week. I’m here if you need anything. I’ve been doing a lot of things recently, but sleeping normally has regrettably, not been one of them. Guys, this is seriously so crazy, I keep waking up at 4:32am or 5:05am or 4:47am every single day for…absolutely no reason. Nothing. No alarm, no siren noise from the New York streets, no A/C blasting in the face, nothing. My body has decided that nope, what we are not going to do between the hours of 4-6am is, well, sleep. Excuse me!?!? I almost feel like I’m back to working in morning television. My Oura ring thinks that I’m severely unwell, lol.
Anyway, I am actually gearing up for my birthday (on November 18, if you feel like, I don’t know, putting it in your calendar or something) and then a trip to New Zealand with my family for Thanksgiving. My dad has planned this entire..uh..active trip for us (read: hiking, kayaking….etc) and quite literally told my mom, sister, and I that we could “opt out” of activities if we felt they were too much for us. Um, what? Are we on the Amazing Race?
I’m excited of course, but I think am still having trouble processing that we are already in November. Is anyone processing this yet? I just hope to stay as present as possible as we head to the end of the year and hope you guys can too — it’s so easy to future fixate and to leap straight into next year, but remember to slow down and enjoy the wind down.
The Recipe
I’m coming to you today with a recipe for a winter cabbage salad, one that’s hearty and delicious, perfect served as a side to your mains, or topped with a protein for your main. I genuinely believe that cabbage is wildly underrated, and if you’re a cabbage skeptic or it just doesn’t ever cross your mind, then 1) sad, and 2) this dish will change your mind.






To give this cabbage salad a seasonal, winter spin, you’ll find Brussels sprouts and roasted butternut squash present, making it a great addition to your thanksgiving or holiday table as well. It’s got smooth, rich creaminess from the roasted butternut, crunch from the cabbage, and finally — spiced, roasted chickpeas, which add protein, texture, and even more flavor. Topped with the creamiest (yet totally vegan) dressing…you will wonder why you were even sleeping on cabbage in the first place.
